Starts; 6pm for pre dinner drinks and canapes
Cost; $150 per person includes canapes, 7 courses and matching wines

Wallaby carpaccio, honey glazed cherries
Saffron gin and tonic
Duck liver parfait, cornichons, sour dough
Tasmanian scallops, cauliflower puree, blood pudding crumb
Blue eye cod, white bean and spec cassoulet and salsa verde
Flinders Island lamb, soft polenta, caponata
Saffron pear, orange and cardamon glaze, saffron honey comb
